Soto Kambing Recipe | Indonesian Food

Let’s cook the soto kambing (goat meat soup).
Indonesian food.

Main ingredients
500 g goat meat (meat + ribs, your choice)
1.2–1.5 liters water for the broth
2 bay leaves (daun salam)
2 kaffir lime leaves (daun jeruk)
1 stalk lemongrass (serai), bruised
1 slice galangal (lengkuas), bruised
Spices (ground)
6 shallots
4 garlic cloves
2 pieces fresh turmeric (or about 1 tsp ground turmeric)
1 thumb‑size piece ginger
3 candlenuts (kemiri), toasted
1 tsp ground coriander
½ tsp ground black pepper
½ tsp ground cumin (jintan, optional but gives a nice aroma)

Optional toppings
Diced carrots
Finely sliced cabbage or lettuce
Fried potatoes
Hard‑boiled eggs
Chopped spring onions and celery
Fried shallots
Lime or lemon wedges
Sambal, sweet soy sauce (kecap manis), and crackers.

How to cook the soto kambing
Clean and boil the goat meat
Wash the meat and ribs well under running water. Rub with lemon or tamarind water and let sit 30–60 minutes to reduce the strong goat smell.

Rinse again, then boil in fresh water until half‑tender (about 15–20 minutes). If you want a clearer, less “goaty” broth, you can discard this first water and continue cooking in new hot water.

Fry the spice paste
Heat a little oil in a pan and sauté the ground spices until fragrant.
Add bay leaves, kaffir lime leaves, lemongrass, and galangal. Keep frying until aromatic and no longer raw‑tasting.

Simmer the soup
Pour the fried spice paste into the goat meat broth and mix well.
Add salt, sugar, and pepper to taste. If you like a coconut‑milk version, stir in 100–200 ml of thin coconut milk and simmer until the broth is slightly thick and creamy.
Continue cooking until the meat is tender and the flavor is well balanced. Taste and adjust seasoning.

Serve
In bowls, put thin slices of goat meat, cabbage, tomato, fried potatoes, and hard‑boiled egg.
Ladle hot broth over the top, then sprinkle with spring onions, celery, fried shallots, and a squeeze of lime.
Serve warm with steamed rice, lontong, or ketupat, plus sambal and crackers.
