Various Types of Rice in the World
Rice comes in many types, but most of the world’s varieties are grouped by grain length, milling level, and cooking use. There are more than 120,000 rice varieties worldwide, and common global categories include long-grain, medium-grain, short-grain, brown rice, white rice, aromatic rice, parboiled rice, and wild rice.
Main Rice Types
Long-grain rice: Slim, separate grains; good for pilaf, fried rice, and stir-fries.
Medium-grain rice: Softer and slightly sticky; often used in risotto and creamy dishes.
Short-grain rice: Plump and sticky; common in sushi and many Asian dishes.
Brown rice: Whole grain rice with the bran layer intact.
White rice: Milled rice with the bran and germ removed.
Aromatic rice: Fragrant types such as basmati and jasmine.
Parboiled rice: Partially boiled before milling, so it cooks firmer and fluffier.
Wild rice: Not true rice, but a North American aquatic grass that is still eaten like rice.
